Seasonal salad

This is a simple, healthy recipe for when you're in the mood for something light. The preparation time is approx. 10 minutes with a few seconds left over to mix it all together. I only use organic ingredients as I believe the overall taste is much nicer, but this is by no means essential. You can always mix and match your vegetables based on what you have in the cupboards. Quick fixes like this always go down a treat.

Ingredients

  • 100 g gluten free sandwich meat
  • 3 cups spinach
  • 2 cups red lettuce
  • 2 cups green lettuce
  • 50 g mushrooms I prefer Chestnut
  • 1 red pepper

Instructions

  1. Wash salad leaves and vegetables, gently pat dry
  2. Take one handful of spinach, one handful of green lettuce and one handful of red lettuce, finely chop
  3. Thinly slice x1 red pepper
  4. Chop x2 medium sized chestnut mushrooms
  5. Cut x4 slices of gluten free meat into small cubes
  6. Add the ingredients to a salad bowl and mix
