This may not be much to look at but it's extremely healthy, tasty and nutritious. And so unbelievably easy to make. It's also a great way to get rid of any vegetables that may need eating.

Ingredients
  • 2 peppers
  • 1/2 pumpkin
  • 5 small cucumbers
  • 1/2 cabbage
  • 3 aubergines
  • 1 organic mixed beans
  • 2 garlic cloves
  • 1 large jar tomato sauce
  • chili flakes to taste
Instructions
  1. Chop the vegetables into bite-sized pieces. Add to the wok.
  2. Cook for 10-15 minutes.
  3. Add the tomato sauce and the mixed beans.
  4. Serve once piping hot.
