This is a simple, healthy recipe for when you're in the mood for something light. The preparation time is approx. 10 minutes with a few seconds left over to mix it all together. I only use organic ingredients as I believe the overall taste is much nicer, but this is by no means essential. You can always mix and match your vegetables based on what you have in the cupboards. Quick fixes like this always go down a treat.

Ingredients
100ggluten free sandwich meat
3cupsspinach
2cupsred lettuce
2cupsgreen lettuce
50gmushroomsI prefer Chestnut
1red pepper
Instructions
Wash salad leaves and vegetables, gently pat dry
Take one handful of spinach, one handful of green lettuce and one handful of red lettuce, finely chop
Thinly slice x1 red pepper
Chop x2 medium sized chestnut mushrooms
Cut x4 slices of gluten free meat into small cubes
