Potato, Feta & Vegetable Bake

- 2 potatoes
- 2 sweet potatoes
- 4 garlic cloves
- 1 large handful of green beans
- 4 tomatoes
- 1 onion
- 4 spring onions
- 1 pumpkin
- 180 g feta cheese
- extra virgin olive oil
- mint leaves as many or as little as you'd prefer
Chop both the potatoes and sweet potatoes into bite-sized pieces and add to a pan of boiling water. Cook until soft.
Chop the vegetables (green beans, tomato, onion, spring onion, pumpkin). Add to a large baking tray.
Once the potatoes are soft, drain the water and add them to the baking tray.
Mix all of the ingredients together.
Drizzle with extra virgin olive oil.
Bake at 180º for 30 mins.
Cut the feta into small pieces. Dice the mint leaves.
Remove from the oven. Add feta and mint leaves.
Cook for a further 15 minutes.
