These couldn't be easier to make and who doesn't love pancakes? Especially healthy pancakes. I've already eaten two this morning (another case of my eyes being bigger than my belly!) On the plus side, the mixture keeps which means you have your breakfast sorted for the next few days. Perfection.
Course: Breakfast
Servings: 2 people
  • x1 handful of blueberries
  • 1/2 cup of gluten free oat flour
  • 1 tbsp maca powder
  • 1 tbsp protein powder
  • 1 banana
  • 1 egg or 2 egg whites
  • almond milk
  • coconut oil
  1. Blend the ingredients in a NutriBullet (or by hand), adding the almond milk for desired consistency
  2. Heat the coconut oil in a small frying pan
  3. Add enough mixture for one pancake to the pan and cook
  4. Before flipping, add the blueberries to the pancake
  5. Cook the other side and voila, ready to serve.
