Everyone loves pancake! But did you know that there are tons of different recipes out there? Pancakes also have many health benefits.
Whole-wheat flour is an excellent source of B-vitamins, except for B12, which is found in food from animal sources – so the eggs and milk in the pancakes supply B12, also in vitamin E. Pancakes are loaded with carbs which means they’re a great source of energy.

Old-Fashioned Pancakes (All recipes)

Ingredients:

  • 1 1/2 cups all-purpose flour,
  • 3 1/2 teaspoons baking powder,
  • 1 teaspoon salt,
  • 1 tablespoon white sugar,
  • 1 1/4 cups milk,
  • 1 egg,
  • 3 tablespoons melted butter.

Directions:

  1. In a large bowl, sift together the flour, baking powder, salt and sugar.
  2. Make a well in the centre and pour in the milk, egg and melted butter; mix until smooth.
  3. Heat a lightly oiled griddle or frying pan over medium high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Brown on both sides and serve hot.

Fluffy Vegan Pancakes (Delish)

Ingredients:

  • 1 c. all-purpose flour,
  • 1 tbsp. granulated sugar,
  • 1 tbsp. baking powder,
  • 1/2 tsp. salt,
  • 1 c. almond milk (or any other non-dairy milk).
  • 2 tbsp. coconut oil, Vegetable or coconut oil, for frying,
  • Maple syrup, for serving, and fresh fruit, for serving (optional)

Directions:

  1. In a large skillet over medium low heat, heat oil.
  2. Using a 1/4 cup measure, pour batter into pan.
  3. Cook 2 to 3 minutes, and flip when you see bubbles forming around the edges of the pancakes.
  4. Cook 2 to 3 minutes more on the opposite side, until golden.
  5. If making a large batch, preheat oven to 200° and place prepared pancakes on baking sheet in oven.
  6. When all batter has been used, serve with maple syrup and toppings of your choice.

Banana Pancakes (All recipes)

Ingredients:

  • 1 cup all-purpose flour,
  • 1 tablespoon white sugar,
  • 2 teaspoons baking powder,
  • 1/4 teaspoon salt.
  • 1 egg, beaten,
  • 1 cup milk,
  • 2 tablespoons vegetable oil,
  • and 2 ripe, mashed bananas.

Directions;

  1. Combine flour, white sugar, baking powder and salt.
  2. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  3. Stir flour mixture into banana mixture; batter will be slightly lumpy.
  4. Heat a lightly oiled griddle or frying pan over medium high heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Cook until pancakes are golden brown on both sides; serve hot.

Keto Pancakes (Delish)

Ingredients:

  • 1/2 c. almond flour,
  • 4 oz. softened cream cheese,
  • 4 large eggs,
  • 1 tsp. lemon zest,
  • Butter, and for frying and serving.

Directions

  1. In a medium bowl, whisk together almond flour, cream cheese, eggs, and lemon zest until smooth.
  2. In a non-stick skillet over medium heat, melt 1 tablespoon butter.
  3. Pour in about 3 tablespoons batter and cook until golden, 2 minutes.
  4. Flip and transfer to a plate
